By definition, an artisan is someone in a skilled trade who creates things by hand. It sets one apart from large-scale manufacturers, and similarly from those who may produce similar items without the level of knowledge and skill of the craftsperson.
Artisan chocolate is made completely by hand. With the small exception of a heat source (a chocolate tempering machine used to bring the chocolate to the proper temperature), all molding, shaping and dipping is performed by the chocolatier.
Wherever possible, the ingredients used in our chocolates come from local sources. The chocolate couverture used is imported from Belgium - for good reason! They do it right! Local dairies provide the cream and butter, and local purveyors supply botanical ingredients like herbs and fruits. CocoaBistro respects the seasons as well, and tries as much as possible to source fresh ingredients in season, decreasing the need for imports for out-of-season produce.
Absolutely! That’s what we do best!
If you have a particular flavour in mind that is not in the “Our Chocolates” section, please feel free to discuss it with us. We can also customize with coloured cocoa butter! Let your imagination run free!
